Ingredients
Scale
- 2 cups dandelion blossoms
- 2 cups sugar
- 1 cup water
- Optional: splash of lemon juice
- Optional: dash of vanilla extract
- Optional: powdered sugar for rolling
Instructions
- Harvest fresh dandelion blossoms, ensuring they are clean and free from bugs. Rinse and dry them.
- In a medium saucepan, combine water and sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture reaches a light boil.
- Add the dandelion blossoms to the syrup and stir gently. Reduce heat and simmer for 10 minutes.
- Strain the mixture through a fine mesh strainer or cheesecloth, squeezing out as much flavor as possible from the blossoms.
- Return the strained syrup to the saucepan and boil for 10-15 minutes until it thickens to a candy-like consistency.
- Drizzle small spoonfuls of the syrup onto parchment paper or a silicone mat to form small candy drops. Allow to cool completely until hardened.
- If desired, roll the candies in powdered sugar before serving.
Notes
- Ensure dandelions are free from pesticides.
- Use a candy thermometer for precision.
- Experiment with flavors by adding vanilla or lemon zest.
