Description
These Copycat Texas Roadhouse Rattlesnake Bites are spicy, cheesy, and perfectly crispy. A crowd-pleasing appetizer made at home!

- 4 cups Pepper Jack cheese, shredded
- 2–3 fresh jalapeños, diced with seeds removed
- ½ cup flour
- 1 egg
- 1 cup whole milk
- 1½ cups breadcrumbs
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp garlic powder
- Vegetable oil for frying
Instructions
- Mix shredded pepper jack cheese and diced jalapeños in a large bowl.
- Form the mixture into 1½-inch balls (about 15 bites).
- Freeze on a cookie sheet for 30–60 minutes.
- Heat oil in a pot to 350°F.
- Mix breadcrumbs with cayenne pepper, paprika, and garlic powder.
- Set up three bowls: one with flour, one with beaten egg and milk, and one with the seasoned breadcrumbs.
- Coat each cheese ball in flour, then the egg/milk mixture, and finally the breadcrumbs.
- Fry 4–5 bites at a time for 3–4 minutes until golden brown.
- Drain on paper towels and serve warm with your favorite dipping sauce.
Notes
- Freeze cheese balls before frying to prevent melting into the oil.
- Fry in small batches to maintain oil temperature.
- Use a deep fry thermometer to keep oil at 350°F for best results.
- Substitute milder cheese like Monterey Jack if desired.
- Air fry at 350°F for 5–7 minutes as a lighter alternative.
