Description

  • 2 large eggplants, diced (about 4 cups)
  • 3 zucchini, diced (about 3 cups)
  • 2 red bell peppers, diced
  • 4 large ripe tomatoes, diced (about 3 cups)
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh thyme leaves
  • 1/4 cup fresh basil, chopped
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautΓ© until soft and fragrant, about 5 minutes.
  2. Add eggplant and bell peppers, cooking for 8–10 minutes while stirring occasionally. Add zucchini and cook for another 5 minutes.
  3. Stir in tomatoes, thyme, basil, and bay leaves. Season with salt and pepper. Lower heat, cover, and simmer for 30–40 minutes, stirring occasionally.
  4. Let the ratatouille stand for at least 30 minutes. Adjust seasoning if necessary and remove bay leaves before serving.
