- 2 large eggplants, diced (about 4 cups)
- 3 zucchini, diced (about 3 cups)
- 2 red bell peppers, diced
- 4 large ripe tomatoes, diced (about 3 cups)
- 1 large onion, diced
- 4 garlic cloves, minced
- 1/4 cup olive oil
- 2 tablespoons fresh thyme leaves
- 1/4 cup fresh basil, chopped
- 2 bay leaves
- Salt and freshly ground black pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautΓ© until soft and fragrant, about 5 minutes.
- Add eggplant and bell peppers, cooking for 8β10 minutes while stirring occasionally. Add zucchini and cook for another 5 minutes.
- Stir in tomatoes, thyme, basil, and bay leaves. Season with salt and pepper. Lower heat, cover, and simmer for 30β40 minutes, stirring occasionally.
- Let the ratatouille stand for at least 30 minutes. Adjust seasoning if necessary and remove bay leaves before serving.
