Description

  • Plain/all-purpose flour – 1 ½ cups (187g)
  • Baking powder – 1 ½ teaspoons
  • Salt – ¼ teaspoon
  • Ground cinnamon – 1 teaspoon
  • Ground nutmeg – ¼ teaspoon
  • Raisins – ½ cup (75g)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper or a silicone mat.
  2. In a mixing bowl, whisk together the vegetable oil, sugar, egg, and vanilla extract until smooth.
  3. In a separate bowl, combine the flour, baking powder, salt, cinnamon, nutmeg, and raisins.
  4. Add the wet mixture to the dry ingredients, mixing well until a soft dough forms.
  5. Place the dough onto the prepared baking tray and shape it into a roll about 10 inches (25cm) long. Flatten it to about ¾ inch (2cm) thick.

  7. Carefully slice the biscotti log into 1cm slices. Place each slice cut-side up on the baking tray.
  8. Return the tray to the oven and bake for an additional 5 minutes, then flip each slice and bake for another 5 minutes until they are crisp.
