Noodles and Sauce

  • 140g/5oz (2 cakes) instant ramen noodles or 250g/8oz fresh noodles (hokkien, lo mein)
  • 2 tbsp chilli crisp (including oil and crispy bits)
  • 2 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp Chinese sesame paste (or substitute with tahini or peanut butter)
  • 1 tsp white sugar
  • 2 tsp toasted sesame oil
  • 1/8 tsp kosher salt (adjust as needed)

Aromatics and Garnish

  • 1 tbsp finely minced garlic
  • 1 tbsp finely minced ginger
  • 1 green onion, finely sliced (or 1/4 red onion finely sliced)
  • 1/3 cup fresh coriander/cilantro, roughly chopped (optional)

Instructions

Step 1: Preparation

  1. Gather all ingredients to ensure a smooth cooking process.

  2. If using Chinese sesame paste, mix well as it tends to separate.

Step 2: Cooking the Noodles

  1. Bring a medium pot of water to a boil.

  2. Cook the noodles according to package instructions (usually 2-3 minutes for ramen noodles).

  3. Drain, reserving 1/4 cup of the cooking water, and set aside.

Step 3: Making the Sauce

  1. In a mixing bowl, whisk together soy sauce, sesame paste, rice vinegar, sugar, salt, and sesame oil until smooth.

  2. Sprinkle the green onions on top but do not mix yet.

Step 4: Infusing the Chilli Crisp

  1. In a small saucepan over medium heat, warm the chilli crisp and 1 tbsp neutral oil.

  2. Add minced garlic and ginger, stirring for 30 seconds until fragrant and golden.

  3. Pour the hot chilli crisp mixture over the sauce and green onions – listen for the sizzle!

Step 5: Tossing the Noodles

  1. Add the cooked noodles directly into the bowl with the sauce.

  2. Toss well until every strand is coated, adding the reserved noodle water as needed to loosen the sauce.

  3. Garnish with fresh coriander and extra chilli crisp.
