Description

Chilean Empanadas are golden, flaky pastries filled with a savory beef and egg mixture called β€˜pino.’ This traditional dish offers a flavorful bite of Chilean heritage, perfect for family dinners or festive gatherings.


Ingredients

  • 1 tablespoon butter
  • 1 large onion, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pound ground pork (or beef)
  • 1 cup raisins
  • 1 cup chopped black olives
  • 3 large hard-cooked eggs, chopped
  • 1 cup water
  • 1 teaspoon cornstarch
  • 1 cup lukewarm milk
  • 1 cup shortening, melted
  • 5 cups all-purpose flour
  • 2 teaspoons salt
  • 2 large eggs, beaten

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add onion, garlic, oregano, cumin, salt, and pepper. Cook until golden brown, 5–7 minutes.
  3. Add ground pork and cook until browned, about 7–10 minutes. Drain excess fat.
  4. Mix in raisins, olives, and chopped eggs.
  5. Whisk water and cornstarch, then add to skillet. Stir until thickened. Remove from heat and let cool.
  6. Mix lukewarm milk and melted shortening in a bowl.
  7. In another bowl, combine flour and salt. Add the milk mixture and mix into a dough. Let rest for 10 minutes.
  8. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  9. Roll out the dough to 1/8-inch thickness. Cut into 12 circles.
  10. Place filling in the center of each circle. Fold, press with a fork to seal, and brush with egg.
  11. Bake for 25 minutes or until golden brown.

Notes

  • Do not overfill the empanadas to prevent leakage.
  • Let the filling cool slightly before assembly.
  • Unbaked empanadas can be frozen for up to 3 months.
  • Brush with egg wash for a glossy finish.
