Instructions

  1. Prepare and Dredge the Chicken
    1. Horizontally slice each chicken breast to create four thinner pieces.
    2. In one shallow dish, whisk together the flour, garlic powder, salt, and pepper.
    3. In a second shallow dish, lightly beat the three eggs.
    4. In a third dish, stir together the panko bread crumbs and Parmesan cheese.
  2. Pan-Fry the Chicken
    1. Dip each piece of chicken first in the flour mixture, shaking off any excess.
    2. Next, coat the chicken in the beaten eggs.
    3. Finally, press it into the panko-Parmesan mixture until well covered.
    4. Warm a cast iron skillet with enough oil to coat the bottom over medium-high heat.
    5. Fry each chicken piece for about 2–3 minutes per side, or until crisp and golden brown.
    6. Transfer the cooked chicken to a paper towel–lined plate to remove excess oil.
  3. Toast the Croissants
    1. Preheat the broiler.
    2. Slice the croissants in half and brush the interior surfaces with melted butter.
    3. Sprinkle a portion of the divided Parmesan cheese on the top halves.
    4. Broil for 2–3 minutes, or until lightly toasted and the cheese has just begun to melt.
  4. Make the Dressing
    1. In a mixing bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, honey, and minced garlic.
    2. Season with salt and pepper, adjusting to taste.
  5. Assemble the Sandwiches
    1. In a separate bowl, toss the chopped Romaine lettuce with some of the creamy lemon dressing.
    2. Set the bottom half of each croissant on a plate, then place a piece of crispy chicken on top.
    3. Layer on sliced avocado and the dressed Romaine.
    4. Finish with the top half of the croissant (the one sprinkled with Parmesan).
    5. If desired, drizzle hot honey over the chicken just before adding the lid for a sweet-and-spicy kick.
