Instructions
- Prepare and Dredge the Chicken
- Horizontally slice each chicken breast to create four thinner pieces.
- In one shallow dish, whisk together the flour, garlic powder, salt, and pepper.
- In a second shallow dish, lightly beat the three eggs.
- In a third dish, stir together the panko bread crumbs and Parmesan cheese.
- Pan-Fry the Chicken
- Dip each piece of chicken first in the flour mixture, shaking off any excess.
- Next, coat the chicken in the beaten eggs.
- Finally, press it into the panko-Parmesan mixture until well covered.
- Warm a cast iron skillet with enough oil to coat the bottom over medium-high heat.
- Fry each chicken piece for about 2β3 minutes per side, or until crisp and golden brown.
- Transfer the cooked chicken to a paper towelβlined plate to remove excess oil.
- Toast the Croissants
- Preheat the broiler.
- Slice the croissants in half and brush the interior surfaces with melted butter.
- Sprinkle a portion of the divided Parmesan cheese on the top halves.
- Broil for 2β3 minutes, or until lightly toasted and the cheese has just begun to melt.
- Make the Dressing
- In a mixing bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, honey, and minced garlic.
- Season with salt and pepper, adjusting to taste.
- Assemble the Sandwiches
- In a separate bowl, toss the chopped Romaine lettuce with some of the creamy lemon dressing.
- Set the bottom half of each croissant on a plate, then place a piece of crispy chicken on top.
- Layer on sliced avocado and the dressed Romaine.
- Finish with the top half of the croissant (the one sprinkled with Parmesan).
- If desired, drizzle hot honey over the chicken just before adding the lid for a sweet-and-spicy kick.
- Serve
- Serve immediately. Pair with sweet potato fries, a simple salad, or fresh fruit on the side for a well-rounded meal.
Notes
- Healthier Options: Swap regular croissants for whole wheat versions, use low-fat dressing, and consider air-frying the chicken instead of pan-frying.
- Make Ahead: Store cooked chicken in an airtight container in the fridge for up to three days. Reheat in the oven or air fryer to maintain crispiness.
- Customization Ideas: Add tomatoes, pickled onions, or bacon for extra flavor and texture. Try using ciabatta, sourdough, or brioche buns in place of croissants.
