- 1 tbsp lemon juice
- 1 cup heavy cream, cold
- 1 cup mascarpone cheese, room temperature
- β cup powdered sugar
- 1 tsp vanilla extract
- ΒΎ cup brewed espresso, cooled
- 2 tbsp Amaretto liqueur
- 1 pack ladyfinger biscuits (about 24)
- Unsweetened cocoa powder for dusting
- Fresh cherries for garnish (optional)
- Shaved dark chocolate for garnish (optional)
Instructions
- Prepare the cherry mixture by combining cherries, sugar, lemon juice, and Amaretto in a saucepan. Cook over medium heat for 5β7 minutes until syrupy. Let cool completely.
- Beat cold heavy cream until soft peaks form. Whisk mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold in whipped cream.
- Dip ladyfingers quickly in espresso mixed with Amaretto. Layer in a dish with half the mascarpone cream and cherry mixture. Repeat layers.
- Refrigerate for at least 4 hours or overnight. Dust with cocoa powder and garnish as desired before serving.

- Ensure mascarpone cheese is at room temperature for a creamy texture.
- Fresh cherries work best, but frozen can be used if thawed and drained.
