  • 1 tsp vanilla extract
  • ΒΎ cup brewed espresso, cooled
  • 2 tbsp Amaretto liqueur
  • 1 pack ladyfinger biscuits (about 24)
  • Unsweetened cocoa powder for dusting
  • Fresh cherries for garnish (optional)
  • Shaved dark chocolate for garnish (optional)

Instructions

  1. Prepare the cherry mixture by combining cherries, sugar, lemon juice, and Amaretto in a saucepan. Cook over medium heat for 5–7 minutes until syrupy. Let cool completely.
  2. Beat cold heavy cream until soft peaks form. Whisk mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold in whipped cream.
  3. Dip ladyfingers quickly in espresso mixed with Amaretto. Layer in a dish with half the mascarpone cream and cherry mixture. Repeat layers.
  4. Refrigerate for at least 4 hours or overnight. Dust with cocoa powder and garnish as desired before serving.
