Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons fresh chives, chopped (plus more for topping)
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon crushed red pepper flakes
  • Kosher salt and black pepper, to taste
  • 1/2 cup shredded Gruyère cheese (about 50g)
  • 1/2 cup shredded fontina cheese (about 50g)
  • 2 small Yukon gold potatoes, very thinly sliced
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten
  • Honey, for serving (optional but highly recommended!)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the puff pastry into a rectangle about 1/4 inch thick, then transfer to the baking sheet.
  3. Use a fork to prick the pastry all over, leaving a 1-inch border around the edges. Brush the pastry with 2 tablespoons of olive oil.
  4. Evenly sprinkle the basil, chives, dill, and crushed red pepper flakes over the pastry, followed by Gruyère and fontina cheeses.
  5. In a bowl, toss the thinly sliced potatoes with 1 tablespoon of olive oil, thyme, salt, and pepper, then layer over the cheese.
  6. Fold the edges of the pastry up over the potatoes and brush with beaten egg.
  7. Bake for 25–30 minutes until golden and crisp. Garnish with extra chives and a drizzle of honey if desired before slicing and serving warm.
