- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs

Instructions
- Preheat oven to 400ยฐF (200ยฐC). Grease a mini muffin tin.
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, sour cream, and green onions.
- Season the mixture with salt and pepper, then mix until well combined.
- Scoop the mixture into the prepared muffin tin, filling each cup nearly to the top.
- Bake for 20โ25 minutes, or until tops are golden brown and edges are crispy.
- Allow to cool for 5 minutes before removing from the tin and serving warm.
