Cheesy Mashed Potato Puffs


Description

Cheesy Mashed Potato Puffs are golden, crispy muffin-tin snacks made from leftover mashed potatoes, cheddar, sour cream, and eggs.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Optional: 1/4 cup bacon bits

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Grease a mini muffin tin.
  2. In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, sour cream, and green onions.
  3. Season the mixture with salt and pepper, then mix until well combined.
  4. Scoop the mixture into the prepared muffin tin, filling each cup nearly to the top.
  5. Bake for 20โ€“25 minutes, or until tops are golden brown and edges are crispy.
  6. Allow to cool for 5 minutes before removing from the tin and serving warm.
