Instructions
- Prepare the Chicken & Pasta:
- Season the diced chicken with salt, pepper, and Italian seasoning.
- Heat 2 tbsp olive oil in a large skillet over medium heat.
- Cook the chicken for 5-7 minutes until golden brown and fully cooked. Remove and set aside.
- In a separate pot, cook the pasta according to package instructions until al dente. Drain and set aside.
- Sautรฉ the Garlic & Onion:
- In the same skillet, add the diced onion and sautรฉ for 2-3 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Make the Creamy Cheese Sauce:
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
- Stir in the heavy cream and bring the mixture to a gentle simmer.
- Gradually add the mozzarella, cheddar, and Parmesan cheese, stirring continuously until smooth and creamy.
- If the sauce is too thick, add a splash of milk or extra broth to adjust the consistency.
- Combine & Finish:
- Return the cooked chicken to the skillet and mix with the cheese sauce.
- Add the drained pasta and stir until everything is evenly coated.
- Stir in spinach or other leafy greens if using, allowing them to wilt in the warm sauce.
- Serve & Enjoy:
- Remove from heat and garnish with fresh basil or parsley.
