- 1 (1 ounce) packet taco seasoning mix
- ½ cup chopped sweet onion
- 4 green onions, chopped
- 1 (8 ounce) package cream cheese, softened
- 1 cup chunky salsa
- 12 corn tortillas, warmed
- 1 cup shredded pepper Jack cheese
- 2 ½ cups enchilada sauce
- 1 (4 ounce) can sliced black olives, drained
Instructions
- Preheat oven to 350°F (175°C).
- Cook ground beef in a skillet over medium-high heat until browned, about 5 to 7 minutes. Stir in taco seasoning.
- Add sweet onion and green onions to the skillet, cook until tender, about 5 to 7 minutes.
- Combine cooked beef and onions with cream cheese and salsa in a bowl, mix well.
- Spoon beef mixture onto tortillas, add pepper Jack cheese, roll, and place in a baking dish.
- Pour enchilada sauce over tortillas, sprinkle with olives and remaining cheese.
- Bake for 20 minutes or until cheese is melted.
