Instructions

  1. Begin by heating the bacon in a large Dutch oven over medium heat. Cook until crisp, about 8 to 10 minutes. Transfer to a plate lined with paper towels, reserving drippings in the pot.
  2. Add carrots, onion, and celery to the reserved drippings. Increase heat to medium-high, cooking until vegetables are softened, about 6–8 minutes. Stir in garlic, salt, black pepper, and cayenne, cooking for 1 minute.
  3. Add butter, stirring until melted, followed by flour, stirring until lightly browned, about 2 minutes.
  4. Pour in beer and cook until thickened, about 2 minutes, then add chicken broth and half-and-half. Bring to a boil, reduce to medium, simmering until it coats the back of a spoon, 12–15 minutes.
  5. Remove from heat and stir in Dijon mustard, Worcestershire sauce, dry mustard, and hot pepper sauce. Gradually add shredded cheese, stirring until melted.
