Ingredients

Scale
  • 1 lb chicken breast, cut into chunks
  • 2 fresh peaches, cut into chunks
  • 1/2 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp ground ginger
  • 2 tbsp fresh basil, finely chopped
  • Skewers

Instructions

  1. Cut the chicken breasts into chunks.
  2. Place chicken in a ziplock bag with balsamic vinegar, olive oil, salt, ginger, and basil. Massage to combine, marinate for 30 mins.
  3. Thread chicken and peach chunks alternately onto skewers.
  4. Preheat grill to medium heat. Grill skewers for 5-7 minutes each side until chicken is cooked.
  5. In a small pot, bring balsamic vinegar to boil, then simmer until thickened to create glaze.
  6. Drizzle the glaze over kabobs before serving with a garnish of basil.

Notes

  • Ensure even cuts for even cooking.
  • Avoid over-marinating the chicken.
  • Maintain grill at medium heat to prevent charring.
