- ½ cup unsalted butter, melted (113g)
- 1 cup light brown sugar, packed (200g)
- 2 large eggs
- 1 cup canned pumpkin puree (240g)
- 2 teaspoons vanilla extract
- For the maple glaze:
- ¾ cup maple syrup (180ml)
- 1 ½ tablespoons unsalted butter (21g)
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- ¼ cup confectioners’ sugar (30g)
Instructions
- Preheat the oven to 400°F (200°C) and coat a donut pan with nonstick spray.
- In a large bowl, whisk together flour, baking powder, pumpkin pie spice, salt, and baking soda.
- In another bowl, beat melted butter and brown sugar until combined. Add eggs one at a time. Stir in pumpkin puree and vanilla extract.
- Mix dry ingredients into wet ingredients until just combined.
- Spoon batter into donut pan, filling about three-quarters full.
- Bake for 10-12 minutes until golden and spring back when touched.
- For the glaze, heat maple syrup until reduced by half. Remove from heat and add butter, vanilla, and salt. Whisk in confectioners’ sugar.
- Let donuts cool for 10 minutes, then dip in glaze and allow to set.
