  • ¾ teaspoon kosher salt
  • ¼ teaspoon baking soda
  • ½ cup unsalted butter, melted (113g)
  • 1 cup light brown sugar, packed (200g)
  • 2 large eggs
  • 1 cup canned pumpkin puree (240g)
  • 2 teaspoons vanilla extract
  • For the maple glaze:
  • ¾ cup maple syrup (180ml)
  • 1 ½ tablespoons unsalted butter (21g)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • ¼ cup confectioners’ sugar (30g)

Instructions

  1. Preheat the oven to 400°F (200°C) and coat a donut pan with nonstick spray.
  2. In a large bowl, whisk together flour, baking powder, pumpkin pie spice, salt, and baking soda.
  3. In another bowl, beat melted butter and brown sugar until combined. Add eggs one at a time. Stir in pumpkin puree and vanilla extract.
  4. Mix dry ingredients into wet ingredients until just combined.
  5. Spoon batter into donut pan, filling about three-quarters full.
  6. Bake for 10-12 minutes until golden and spring back when touched.
  7. For the glaze, heat maple syrup until reduced by half. Remove from heat and add butter, vanilla, and salt. Whisk in confectioners’ sugar.
  8. Let donuts cool for 10 minutes, then dip in glaze and allow to set.
