Ingredients
For the Baked Cod:
- 4 cod fillets (fresh or thawed if frozen)

- 1 tablespoon olive oil

- ¾ cup coconut cream
- 2 tablespoons fresh lemon juice
- 2 tablespoons garlic butter
- 1 tablespoon Dijon mustard
- 2 small shallots (or 1 large), finely chopped

Instructions
- Preheat the Oven:
Preheat your oven to 390°F (200°C). - Prepare the Fish:
Pat cod fillets dry with a paper towel. Season both sides with salt and pepper. Lightly grease a baking dish with olive oil and lay the fillets in it. - Make the Sauce:

Notes
