For the Baked Cod:

  • 4 cod fillets (fresh or thawed if frozen)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Coconut Lemon Cream Sauce:

  • ¾ cup coconut cream
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons garlic butter
  • 1 tablespoon Dijon mustard
  • 2 small shallots (or 1 large), finely chopped

For Garnish:

  • Fresh parsley or cilantro, chopped
  • Lemon slices (optional)

Optional Side Pairings:

  • Cooked quinoa, steamed rice, roasted vegetables, or mashed potatoes

Instructions

  1. Preheat the Oven:
    Preheat your oven to 390°F (200°C).
  2. Prepare the Fish:
    Pat cod fillets dry with a paper towel. Season both sides with salt and pepper. Lightly grease a baking dish with olive oil and lay the fillets in it.
  3. Make the Sauce:
    In a mixing bowl, whisk together coconut cream, lemon juice, garlic butter, Dijon mustard, and chopped shallots until well combined.
  4. Bake the Fish:
    Pour the sauce evenly over the cod fillets in the baking dish. Bake for 10–12 minutes, or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. Garnish and Serve:
    Remove from the oven, spoon sauce over each fillet, and garnish with fresh herbs and lemon slices. Serve hot with your choice of side.

Notes

For a deeper flavor, marinate the cod in lemon juice for 15 minutes before baking. Be sure to pat the fillets completely dry to prevent a watery sauce. For a richer taste, use full-fat coconut cream. This dish pairs beautifully with a light Quinoa Salad or roasted veggies.
