Authentic Kanom Jeeb: Thai Dumplings to Try


Description

Authentic Kanom Jeeb is a traditional Thai dumpling made with ground pork, garlic, and herbs, steamed to perfection and served with dipping sauce.


Ingredients

  • 14 oz (3 1/4 cups) ground pork
  • 1 egg
  • 2 small coriander roots
  • 2 tsp black peppercorns
  • 2 cloves garlic
  • 1/4 cup finely diced carrots
  • 2 tbsp chopped green onions
  • 2 dried shiitake mushrooms, soaked and chopped
  • 3 tbsp golden mountain sauce
  • 1 1/2 tbsp white sugar
  • 2 1/2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 pack dumpling wrappers
  • 1 1/2 tbsp sesame oil
  • Garlic oil, for brushing
  • Crispy fried garlic, for garnish

Instructions

  1. Pound coriander root, black peppercorns, and garlic using a mortar and pestle until coarse.
  2. In a bowl, mix golden mountain sauce, white sugar, sesame oil, and oyster sauce.
  3. Add ground pork, sauce mix, egg, and cornstarch into a blender or food processor. Pulse until smooth.
  4. Transfer the mixture to a bowl and stir in the crushed spice mix, diced carrots, green onions, and mushrooms.
  5. Place a wonton wrapper over the back of a tablespoon and press gently to form a well. Add filling to the center.
  6. Moisten the wrapper edges with water, fold them up and around the filling, and pinch to seal.
  7. Line a bamboo steamer with parchment paper and place the dumplings inside. Steam over medium heat for 10 minutes.
  8. Brush steamed dumplings with garlic oil and sprinkle with crispy fried garlic before serving.

Notes

  • Cover wonton wrappers with a damp cloth to keep them from drying out.
  • Don’t overfill wrappers to avoid tearing during steaming.
  • Steam dumplings until wrappers are translucent and fully cooked.
  • You can substitute pork with shrimp or vegetables for a variation.
