- 1 and 1/2 teaspoons cornstarch
- 10 oz. cream cheese โ softened
- 6 Tablespoons sugar
- 1 and 1/2 teaspoons vanilla
- 2 teaspoons all-purpose flour
- 1 egg
- Caramel sauce โ for serving
Instructions
- Prep your muffin pan with paper liners and preheat the oven to 325ยฐF (163ยฐC).
- Mix Graham cracker crumbs, sugar, and cinnamon; add melted butter and press into each liner, then chill.
- For the crumb topping, combine flour, brown sugar, oats, cinnamon, and nutmeg; add melted butter and mix.
- Beat the cream cheese until smooth; add sugar, vanilla, and flour, mixing in the egg last.
- Spoon the cream cheese filling over crusts, filling each cup two-thirds full.
- Mix apples with lemon juice, brown sugar, cornstarch, cinnamon, and nutmeg; spoon over the cheesecake filling.
- Top each mini cheesecake generously with crumb topping.
- Bake for 28-30 minutes until tops are firm; cool in the pan, then chill.
- Drizzle with caramel sauce before serving.
