  • 2 Tablespoons light brown sugar
  • 1 and 1/2 teaspoons cornstarch
  • 10 oz. cream cheese โ€“ softened
  • 6 Tablespoons sugar
  • 1 and 1/2 teaspoons vanilla
  • 2 teaspoons all-purpose flour
  • 1 egg
  • Caramel sauce โ€“ for serving

Instructions

  1. Prep your muffin pan with paper liners and preheat the oven to 325ยฐF (163ยฐC).
  2. Mix Graham cracker crumbs, sugar, and cinnamon; add melted butter and press into each liner, then chill.
  3. For the crumb topping, combine flour, brown sugar, oats, cinnamon, and nutmeg; add melted butter and mix.
  4. Beat the cream cheese until smooth; add sugar, vanilla, and flour, mixing in the egg last.
  5. Spoon the cream cheese filling over crusts, filling each cup two-thirds full.
  6. Mix apples with lemon juice, brown sugar, cornstarch, cinnamon, and nutmeg; spoon over the cheesecake filling.
  7. Top each mini cheesecake generously with crumb topping.
  8. Bake for 28-30 minutes until tops are firm; cool in the pan, then chill.
  9. Drizzle with caramel sauce before serving.
