  • 1 tsp ground nutmeg

  • 1 Cup (226g) unsalted butter, room temperature
  • 3/4 Cup (150g) packed brown sugar
  • 1 1/4 Cups (250g) granulated sugar
  • 1 tsp pure vanilla extract
  • 1 large egg, room temperature
  • 2 1/2 Cups (600ml) unsweetened applesauce
  • 2 large granny smith apples, peeled and diced
  • 2 tsp lemon juice
  • 1/4 Cup (50g) packed brown sugar
  • 1/4 Cup (50g) granulated white sugar
  • 2 Tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp salt
  • 1 Cup (240ml) water
  • 1/2 Cup (40g) old-fashioned oats
  • 1 1/2 Tbsp granulated sugar
  • 1/4 Cup (50g) packed brown sugar
  • 1 1/2 Cups (339g) unsalted butter, room temperature
  • 5 1/4 Cups (630g) powdered sugar
  • 1 Tbsp pure vanilla extract
  • 3 Tbsp (45ml) whole milk, room temperature
  • 1/4 tsp salt, or to taste

Instructions

  1. Preheat your oven to 350ΒΊF. Prepare your cake pans by greasing with cooking spray and lining with parchment paper.
  2. In a large bowl, whisk together all dry ingredients for the apple spice cake and set aside.
  3. Cream the butter using an electric mixer on high speed until light and fluffy, about 2 minutes.
  4. Beat in the brown and white sugars on medium speed for another 2 minutes, then mix in the vanilla and egg.
  5. Alternate adding the flour mixture and applesauce, starting and ending with the flour. Mix until just combined.
  6. Divide the batter between prepared cake pans and bake for 36 to 42 minutes. Cool on a wire rack.
  7. For the apple pie filling, combine sugars, cornstarch, and spices in a saucepan with water. Bring to a boil.
  8. Add the diced apples and lemon juice, simmer until tender, then cool completely.
  9. For the crumble topping, mix all ingredients except butter. Add butter, mixing until pea-sized clusters form. Bake on a sheet for 10 minutes at 350ΒΊF until golden brown.
  10. Once cakes are cooled, level layers. Pipe a circle of cinnamon-vanilla buttercream on the first cake layer, fill with apple pie filling, and repeat with other layers. Crumb coat the cake and refrigerate for 20 minutes.
  11. Finish decorating with buttercream and crumble topping. Garnish with apple slices if desired.
