  • 850g apples, about 4 medium, peeled, cored, diced small (6 cups)
  • 30g unsalted butter (2 tbsp)
  • 80g granulated sugar (β…“ cup)
  • Β½ tsp ground cinnamon
  • ΒΌ tsp kosher salt
  • 1 tbsp corn starch
  • 125g pecan halves (1 cup)
  • 190g unsalted butter, room temperature (ΒΎ cup + 2 tbsp)
  • 280g brown sugar (1 Β½ cups)
  • 2 tbsp plus 1 tsp ground cinnamon

  • 115g unsalted butter, room temperature (Β½ cup)
  • 225g cream cheese, room temperature (8 oz)
  • 250g powdered sugar, sifted (2 cups)
  • 1–2 tbsp heavy whipping cream
  • Β½ tsp kosher salt

Instructions

  1. Mix lukewarm milk, half of the sugar, and yeast. Let sit for 10–15 minutes until foamy.
  2. In a stand mixer, combine flour, salt, and remaining sugar. Add milk mixture and eggs, mixing on low speed for 2–3 minutes, then on medium speed for 5 minutes.
  3. Gradually add butter, mixing until incorporated. Knead dough for 7–10 minutes until smooth. Refrigerate for at least 2 hours or overnight.
  4. Melt butter in a skillet over medium heat, add apples, sugar, cinnamon, and salt. Cook for 3–5 minutes until tender. Stir in corn starch and cook until thickened. Chill until ready to use.
  5. Preheat oven to 350Β°F and toast pecans for 10 minutes. Cool and store.
  6. Mix butter, brown sugar, cinnamon, and salt for the cinnamon filling. Set aside.
  7. Grease or line a 9Γ—13-inch pan. Roll dough to a 24Γ—16-inch rectangle. Spread cinnamon filling evenly, add apple filling, and sprinkle pecans. Roll tightly from the long side, cut into rolls, and arrange in the prepared pan.
  8. Cover and let rise for 45–60 minutes until puffy. Preheat oven to 350Β°F and bake for 35–40 minutes until golden brown. Cool for 15 minutes before frosting.
  9. Beat butter and cream cheese until smooth. Add powdered sugar, cream, and salt, whipping until fluffy. Spread over warm rolls.
