- For the Apple Cider Buttercream:
- ½ cup unsalted butter, softened
- 3 cups powdered sugar
- ¼ cup reduced apple cider
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Simmer 1 cup of apple cider over medium heat until reduced to ¼ cup. Set aside to cool.
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, beat softened butter and brown sugar until light and fluffy. Add egg and vanilla extract, mixing until smooth.
- Blend in the cooled cider reduction.
- Gradually incorporate dry ingredients in thirds, alternating with milk, beginning and ending with dry mix. Mix until just combined.
- Spoon 2-tablespoon amounts of batter onto baking sheets, leaving space between each. Bake for 10–12 minutes until firm. Let cool completely on wire racks.
- For buttercream, beat softened butter until creamy. Gradually mix in powdered sugar, then add cider reduction, vanilla extract, and a pinch of salt. Beat until smooth and fluffy.
- Match cookie halves by size, pipe or spoon buttercream onto one half. Drizzle with caramel sauce and add a sprinkle of flaky sea salt if desired. Top with the second half and press gently to create a sandwich. Repeat with remaining pieces.
