  • For the Topping
  • 3 tbsp unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 325ยฐF (163ยฐC). Grease a 9ร—5 loaf pan and line it with parchment paper.
  2. In a small saucepan, boil the apple cider for about 10 minutes until reduced to 1/2 cup. Allow it to cool slightly, then mix in the sour cream and vanilla extract.
  3. In the same saucepan, melt the butter and let it cool briefly.
  4. In a large bowl, beat the eggs and brown sugar until smooth and frothy. Gradually whisk in the melted butter until fully combined.
  5. In another bowl, whisk together the flour, cornstarch, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Combine the dry ingredients with the egg mixture, alternating with the cider mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter into the loaf pan and bake for approximately 55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, allow the loaf to cool in the pan for about 10 minutes before removing to cool for an additional 5 minutes on a wire rack.
  9. For the topping, mix the sugar and cinnamon in a small bowl. Brush the cake with melted butter and generously coat with the cinnamon-sugar mixture on all sides.
