- 1/2 cup sour cream

- 3 tbsp unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
Instructions
- Preheat your oven to 325ยฐF (163ยฐC). Grease a 9ร5 loaf pan and line it with parchment paper.
- In a small saucepan, boil the apple cider for about 10 minutes until reduced to 1/2 cup. Allow it to cool slightly, then mix in the sour cream and vanilla extract.
- In the same saucepan, melt the butter and let it cool briefly.
- In a large bowl, beat the eggs and brown sugar until smooth and frothy. Gradually whisk in the melted butter until fully combined.
- In another bowl, whisk together the flour, cornstarch, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine the dry ingredients with the egg mixture, alternating with the cider mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter into the loaf pan and bake for approximately 55 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the loaf to cool in the pan for about 10 minutes before removing to cool for an additional 5 minutes on a wire rack.
- For the topping, mix the sugar and cinnamon in a small bowl. Brush the cake with melted butter and generously coat with the cinnamon-sugar mixture on all sides.

- To avoid overmixing, combine the wet and dry ingredients by folding them gently until just incorporated. This will keep the cakeโs texture light and airy.
- If you prefer a more intense apple cider flavor, consider reducing the cider further or using a more concentrated apple cider syrup.
