Ingredients
Scale
For the Sauce:
- 1/4 cup extra-virgin olive oil
- 6 to 8 garlic cloves, peeled and lightly crushed
- 2 pints cherry tomatoes
- 1/2 tsp red pepper flakes (optional)
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 1/2 cup heavy cream
For the Gnocchi:
- 2 (16-oz.) packages potato gnocchi
- 1/2 cup reserved pasta water
Toppings:
- 2 (4-oz.) balls fresh burrata cheese
- 1/2 cup fresh basil leaves, sliced or torn
Instructions
- Prepare the Sauce:
- Heat olive oil in a large skillet over medium-low heat. Add crushed garlic and cook for about 2 minutes until fragrant.
- Increase heat to medium and add cherry tomatoes. Cook for 10–12 minutes, stirring occasionally, until the tomatoes soften and release their juices.
- Sprinkle in red pepper flakes (if using), salt, and black pepper. Reduce heat to medium-low and stir in the heavy cream. Simmer for another 5 minutes to allow flavors to meld.
- Cook the Gnocchi: Meanwhile, bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions (about 2-3 minutes), until they float to the top. Reserve 1/2 cup of pasta water before draining.
- Combine Everything: Transfer cooked gnocchi to the skillet with the sauce. Add the reserved pasta water and toss everything together until well coated.
- Finish & Serve: Tear burrata into smaller pieces and spread evenly over the gnocchi. Remove from heat, sprinkle with fresh basil, and serve immediately.
Notes
- Customize It! Add cooked Italian sausage, crispy pancetta, or sautéed spinach for extra flavor.
- Make It Spicier: Increase the red pepper flakes for a bolder kick.
- Pair It With: A fresh arugula salad and a side of crusty bread for the perfect meal.
- Storage Tip: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat with a splash of water or broth to loosen the sauce.
- Freezing: Freeze without burrata in an airtight container for up to 3 months. Thaw overnight before reheating.
