  • 2 (16-oz.) packages potato gnocchi
  • 1/2 cup reserved pasta water

  • 1/2 cup fresh basil leaves, sliced or torn

Instructions

  1. Prepare the Sauce:
    1. Heat olive oil in a large skillet over medium-low heat. Add crushed garlic and cook for about 2 minutes until fragrant.
    2. Increase heat to medium and add cherry tomatoes. Cook for 10–12 minutes, stirring occasionally, until the tomatoes soften and release their juices.
    3. Sprinkle in red pepper flakes (if using), salt, and black pepper. Reduce heat to medium-low and stir in the heavy cream. Simmer for another 5 minutes to allow flavors to meld.
  2. Cook the Gnocchi: Meanwhile, bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions (about 2-3 minutes), until they float to the top. Reserve 1/2 cup of pasta water before draining.
  3. Combine Everything: Transfer cooked gnocchi to the skillet with the sauce. Add the reserved pasta water and toss everything together until well coated.
  4. Finish & Serve: Tear burrata into smaller pieces and spread evenly over the gnocchi. Remove from heat, sprinkle with fresh basil, and serve immediately.
